We love this delicious bariatric friendly dessert when you are craving apple pie for the holidays! There are numerous health benefits to eating an apple a day and this is a fun, easy to make lighter dessert option! Enjoy!
3 pounds apples (9 or 10 medium apples), peeled, cored, and quartered
1/4 cup orange juice
2 teaspoons vanilla extract
2 teaspoons cinnamon
1/8 cup low-fat, sugar-free frozen yogurt – see below for nutrition tip.
*In a large saucepot, combine the apples, orange juice, vanilla, and cinnamon. *Cover and simmer for 30 minutes, or until the apples are tender, stirring occasionally.
*Mash the apples with a potato ricer until smooth.
*Top each serving with 1 1/2 teaspoons yogurt, if using
